Windy Day Ribs and Chicken

Yesterday was a really windy day here but I had planned to smoke a rack of ribs and I had a feeling it would affect the cook. I got the Keg going and let it heat up and used some apple wood for smoke. I had it stable at 200* and put the ribs on right about noon. I removed the membrane and seasoned these with just SuckleBusters PSG rub and nothing else. I went inside and having a headache I decided to lie down and catch the noon news. I got to watching the Weather Channel with all the flooding going on in Houston and dozed off for a bit. Got up checked the ribs and they were looking fine about two hours in. Went back in with the headache still and watched news again and next thing I know I'm waking up and it's four o'clock. Lol........ I go check on the ribs and the temp is right at 300* and wind is blowing swirls in the yard. Apparently it was blowing just right to feed the fire and kick up the temperature. The ribs looked perfect! No wrapping in foil but time to sauce them. I slathered them up with some Shed sauce, let 'em set and took them off. Total cook time for them about 4.5 hours.





Next up was some chicken leg quarters. Same seasoning.





Those ribs were delicious! Chicken was great too!
