Just Another Red Bean Monday!

Ask anybody in or from Louisiana what comes to mind when Mondays roll around and most or all will say "Cooking and or eating Red Beans and Rice!" . So in keeping with that local tradition and it being Monday of course it's time to put a couple of pounds on to cook slowly.

Red beans soaking



Cajun and smoked sausage browned and set aside to add to the beans later.



Celery, onions, red bell pepper(no green at home), bay leaves and garlic cooking down a bit.



Everything in the pot! This will come up to a boil, reduced to a simmer and cook until beans are almost tender then the sausages go back in the pot and cooked until more tender and getting creamy. Not crazy about watery beans.

Thanks but those previous pictures are while the beans weren't cooked yet. Lol.........
Now they're done!



Got some jasmine rice cooking right now and making some garlic bread to go with the beans.

Darn Photobucket! Wasn't cooperating last night.
Alright, so the beans were cooked and served for dinner last night. They came out pretty darn good if I must say so. I picked up a loaf of fresh French bread yesterday afternoon and made some garlic butter, slathered a bunch on and warmed the bread just in time for dinner and it was awesome!

I went out and got the beans yesterday after seeing this recipe. Soaked them overnight and will start cooking this afternoon.
It's a cold and crappy day today so this will be a great warm-up supper. Thanks again.
