A Quick Taco Lunch
« Reply #-1 on: July 02, 2016, 03:37:20 PM »
Was getting things ready to start smoking a batch of beef shorties but the hunger pangs took over. What to make......? Oh leftover ribeye steak! Tacos!!!
Cut the steak up in strips and got them warming up in a pan with a tsp of lard. Sprinkled on some BD's Margarita rub and mixed it all up. My other half got the cilantro, smoked cheese, and salsa at the ready.
Threw 6 corn tortillas into the micro tortilla warmer and it was time to eat!
Oh yeah! Mighty fine! :D

Oh by the way, a great product if you see it. Kroger's Private Selection, New Mexico Green Chili Salsa.
Wonderful!

Do you store your leftover ribeye next to your leftover bacon? 8)

I do Pappy!  :D But I never have leftover steak orrrrr bacon......fortunately tho, Mrs Hikerman was kind enough to share her large portion of ribeye with me today! And while rooting around in the fridge....you guessed it...no bacon! >:(

"Fortunately" and "kind" don't even begin to describe your luck and her sacrifice.

...no bacon!
"Unfortunately" and "Oh $hit!" don't even begin to describe your lack of foresight. How can ANYONE run out of bacon? Ever?

PS - The tacos look excellent.
