Hello everyone!

About three years ago I started getting serious about backyard cooking. To start my new journey, I bought a $120 charcoal grill (that since has rusted out). This was quite an improvement over the $20 department special I was using! I have burned and/or incorrectly cooked so much food in my lifetime! What a shame.

Presently, I am experimenting with a gas unit (and how to add in the smoke flavor). Boy, did I ever spend a fortune on this. To some people in my circle, I am their expert. But I know I need to learn more.

Perhaps the most consistent way to add smoke flavor using a gas grill is to purchase an Amazen smoker tube. No moving parts, and uses pellets or small old chips - tho I find the uniformity of pellets to be better.

Look at the Site Sponsor section for Amazen smoker.

Now, given the correct circumstances - you can "pre-smoke" or "cold smoke" what you plan on grilling and gain the cooked over wood flavor.
But, you want to be careful - in that ground meat and poultry are particularly prone to propagation of salmonella if not handled correctly. Look at the food safety section for some ideas. Whole muscle cuts of meat vs ground are better candidates for pre cook smoking especially during the warmer time of the year - but again, read, read, read to get comfortable with food safety. No amount of advice will keep you safe from yourself  ;D....So, also reference the USDA website for safe food handling practices. Lots to learn there.

Otherwise - you, my friend - need a smoker ;) :D. And - there are SO many choices - I don't want to give you a headache.  Step at a time! :)

Welcome from Alabama. I am probably going to spring for the Amazen smoker tube but for now I go low tech and put some wood chips or pellets in an aluminum foil packet and poke a hole in it and get it going on the hot part of the grill before I put the meat on. It gives the food a kiss of smoke and just makes my deck smell really good while I am cooking.
