Seasoning Dredged Wings

I tried something new with wings last night and they turned out great! You know how it's hard to season wings on the grill, spice falls off and lots just goes into the fire and the seasoning that does stick can burn? Instead I put my seasoning in a bowl and threw the wings in a few at a time immediately off the hot grill and tossed them . Then, when all complete and while still hot I covered with a bowl and a towel for 10 minutes to let the seasoning hydrate and adhere. The wings could be returned to the grill briefly after to really set the seasoning.

Your mileage may vary and it might take a couple attempts to get the salt level right. The seasoning I used first ingredient was sugar second was salt, and I think I may cut it next time 3t seasoning to 1t garlic granules, paprika, mild chile powder etc. I would definely suggest cutting by perhaps 1/3 if using a seasoning where salt is the first ingredient. Or mix up your own altogether.

I think it's a great technique.
