Well, it took a couple of days but looks like I finally got signed up! I'm not very experienced at BBQ, just a steak or some burgers once in a while and once tried clone recipe of a Pollo Loco chicken.
I have a tiny Weber type grill and a larger Weber that I installed a thermometer on top; but just a couple of days ago I finished putting together my new Big Easy Charbroil smoker/infrared grill/roaster. Now I just have to season it which I will do today.
I think the first thing I want to cook in there later this week will be a small chicken. I've watched a bunch of videos on you tube and it does seem there is a learning curve on the timing; and I don't want to over cook the chicken first time out, so I'll search the archives here for whatever hints I can find to hopefully give me a successful first effort. In fact, it was one of those videos where the fellow mentioned this group! So I will now start perusing the archives here for a bit.
