Has anyone here seen grilling on an Infiernillo? I started watching a series on Netflix called Chefs Table. It’s a series about famous chefs of the world. One I like was about Francis Mallman from Argentina.

One cook I saw him doing was on what looked like a large maybe 3X6 foot iron table made with a shelf in the middle. He had built a wood fire on the bottom and the top and was cooking on the shelf. It’s called an Infiernillo; an old Incan method of cooking. It is used to cook large cuts of meat, poultry and whole fish (often encased in salt).

It looks like it would be easy to build one using angle iron and sheet metal on top and expanded metal for the cooking shelf. To see what they look like google it and there are images of them too.

Don I have a good friend from Argentina a who is a chef. I am going to ask him about this and will post when I get some info.
