I have been hungry for wings and Steven Raichlen's newsletter came the other day with a wing recipe that sounded excellent. Mrs H picked up 4 lbs of wings for me on Friday so I was rarin' to go! Saturday was spoken for so today was going to be wing day! Our youngest daughter had her baby shower today so I was left alone to fend for myself and Bella. The trouble started at 7:00 am. Snow and lots of it. I still thought I could pull this off but as the day went on it looked less and less likely. Ok, my version of Smokehouse Wings would have to forego the smoke part and be done inside!
But you know a good recipe is still a good recipe....so we will see.
The wings got cut up and the tips would be a snack for Bella. The drumettes got put in a marinade of cilantro, sea salt, pepper, coriander, and sesame oil. After a couple hours of soaking up all those flavors they went into the oven. Towards the end temp got bumped up and sweet potato fries went in too.
When the wings were done they got put in a bowl and sliced jalapenos that had been cooked in butter and then met up with some Sriracha sauce, got poured over the wingies, then more cilantro and crushed peanuts topped it off. Mrs H arrived home in tome to eat. Man oh man were these good! Served with a fine salad, the sweet tater fries and plenty of Hamms. Definitely gotta try these on the pellet grill. ....weather permitting of course!
