Ideas for Standing Rib roast?

So... went to the local grocery today to pick up things for chili and I came across a sale price of 5.99/ lb for standing rib roasts.  I am used to seeing them for 10.99 / pound.  These are 4-7 bone in (though it looks like 2-3, about 3" thick- 2.3 lbs each)

I picked up 2 good ones and now.... what should I do with them?  Looking for some good suggestions....

I would sear the heck out of the outside. Then 225 degrees until preferred IT. The low cooking temp will create a more consistent internal color.

Eric - why kind of cooking equipment do you have?

(One of the advantages of listing your cookers in your signature - that way others can look at that and suggest new things to try that work well on your cooking gear!)

A recipe I have used several times includes freshly shredded horseradish root coating the outside of the SRR.  I usually use some Cajun mustard as my glue.  I generally cook it indirect on my Weber or smoke it on my MAK.

Hope this gives you some ideas.

Yeah, but I do not have a lot available yet.  I have a grill that has a smoker, but I found the smoker does not work well even with the mods.  I have a Red Box Smoker and a TBE.  Other than that, not much.  This spring, I will be picking up a WSM - but that is a couple of months away (the local store does an Open house - can save 20-50% off purchase!)

Thanks for the other ideas.  I am thinking I will save one until the WSM.  The other will probably be used in the house - I like the idea of searing it - have a cast iron skillet that would be perfect.  Then cooking it in the oven at 225.  I could smoke it outside, but with the weather, I really prefer not to mess with charcoal on the smaller unit.

I do all my standing rib roasts in TBE. You just have to work till you have it down right. I still cook to the temp I want but i pretty much have it figured out.

I may try that with the smaller portion.  I just picked up another one today - 5.75lb roast for $34.  That one will be frozen and use it for Easter dinner with the in laws.
