First Meal Using My Homemade Sicilian Sausage Patties

I took four of my Sicilian wine and cheese patties and browned them in evoo, about 3-4 minutes per side. Removed to a plate. To the pan added 1/2 lg onion sliced thin, 3 small peppers thinly sliced as well. This sauteed for five minutes. Remove and place on sausage patties. To the pan add 1 T butter, when melted, distribute, then place 4 slices of bread (I used four whole wheat buns cut in half) in pan, top with cheese of your choosing, (I used mozzerella) next place the patties on top of cheese on each. Now divide the onions and peppers atop the four patties, top with more cheese, and finally a piece of bread, or in my case the bun tops. After a couple minutes flip and brown the other side. Voila!
Plated with a side of pasta with marinara sauce...and cheese!
Absolutely mouth-watering tasty!

This recipe did include cracked fennel seed Pam but there is so much flavor omitting the fennel would still offer a great flavor. The romano cheese is the standout flavor in this sausage recipe.

OK..I thought of maybe grinding the fennel and using like half or less for flavor..will just have to try it..send recipe please.   .☆´¯`•.¸¸. ི♥ྀ.

Pam the recipe is from Rytek Kutas's book, it's at home and I'm at work. You could Google....Sicilian-Italian wine cheese sausage. Or wait til I get home this evening.  Let me know

Found this online. It is from Rytek Kutas's book. I halved this recipe but next time will double it for 20lbs.

Sicilian-Italian Wine Cheese Sausage

8 lbs pork butt
2 lbs lean beef
2T powdered dextrose
1T cracked black pepper
4 T kosher salt
3 T fennel seed
2T crushed red pepper
2 C dry white wine
6 T good romano cheese crumbled (I doubled)

Grind meat using 3/8" disc. Mix then add cheese. Mix. I then added remaing ingredients to blender. After 20-30 secs. added to meat and mixed well. Refrigerated a few hours before making into patties. If stuffing, stuff immediately.

Lol Well Art if I was to do that I'd have to pack it in dry ice. And if i was going to do that i may as well throw a box of Hamm's in for good measure!   8)
