Very nice looking jerky Mo. I use Beech with fish, because it is hard to get Alder over her win the East....Have you tried using Cherry +Pecan. Incredible aroma and flavor. Rich and sweet - but milder than you would think.

Any kind of venison meat is tasty but Jerky is one of my favorite.
