Brisket Nachos? Yes Please!

So, lunch was on me, the wife had dinner under control :)

She took roma tomatoes, garlic, jalapenos, onion and stuck'em on the pitboss pellet pooper on smoke for a couple of hours. She made salsa that I LOVE and put it in the fridge to chill. When the time came, she took some brisket and shredded it in the kitchenaid with the paddle, flopped it in a pot with some ancho chili powder and put that on some chips with rotels, black beans, black olives, pickled jalapenos and lots of shredded cheese. We also had queso (which she used sparingly for some odd reason). My plate had lots of cheese dip (queso) and that glorious salsa on top, along with a couple of dollops of sour cream. Man.....believe me when I tell you, it was GOOOOOD!

 I make them with pulled pork all the time and they are  also good, I dont  usually end up with  much in the way of leftovers when I do a brisket.  Been wanting to do both   without a crowd  so I could put a bunch away in the freezer.

You put the meat in the KA bowl, attach the paddle and turn it on to shred the big chunks of meat. We do this with chicken as well when we make enchiladas. Easy little time saver.
