another big difference between the PBC and the Po Man will be the flavor profile the cooker produces.

The PBC has an open fire pit so the drippings from the meat can drip to the coals below and create that "grease fog" for that great "granpappy" flavor

The Po Man uses a deflector plate that covers the charcoal. More infrared heat and sizzlings of drippings hitting the deflector plate.

Wes told me you can hang small cuts of meats from the top with the deflector plate off for a sear.

The lid still must be on and cracked however. If left uncovered the flames will destroy your supper.

The box should be on my front porch tomorrow so we will get after it.

The Po Man came yesterday in a very sturdy box.


Now they might call the cooker a Po Man but there is nothing Po about the packaging. Well protected and thought out for no wasted space


Lots of bubble wrap and packaging to prevent transit damage




Here is everything that you need to get your Po Man assembled

So you get your new cooker and now it is time to assemble.

Most pits have 15 page instruction books and you need all the tools you own to build it in 3 hours

Not with the Po Man!!!!  4 nuts and bolts for the lid handle and you are off and running

You can take your readers off Smooch, there is no instruction manual

followed the manufacturers instructions and got her fired up in no time

Lets get cooking. Followed the Mfg directions. Did a full coal box (about 5 lbs).

Had some marinated chicken halves


Skewered em and hung em


The only adjustment you have to make is the lid and since I was hanging poultry I went around 1/2 inch gap


In one hour and 45 minutes I got this:

Oh wait, yes it does!!


Now I did this cook three days ago and I can safely say that this was hands down the best chicken I ever have.

Off of any cooker.

The ease of the cooking process is basically setting your lid for the gap you want and then coming back to the best chicken ever!!!!!!

More cooks to come. We are just getting started folks.

You can hang/skewer probably 3 split chickens and don't forget you can add the grate to a lower level and add another split chicken to it.

The flavor profile is spot on. I was wondering about that since you use a deflector plate to "cover the charcoal" instead of letting the juices hit the coals and create the grease fog.

However, this cooker is more towards infrared type heat and the juices do sizzle on the deflector plate.

In fact you can hear the sizzling during the cook, pretty cool.

You are still getting charcoal flavor because you are still doing a minion method type cook under the deflector plate.

So if you do not like the heavy grease fog flavor from the open coals you will love this.

All the sizzling going on and the smoke after the first hour I had to open the lid and I was expecting burnt black yardbirds.

As from the pictures you just saw though, this cooker spits out the best chicken around IMHO.
