7 degrees here in Minnesota, really needed to light some charcoal.

Brined and cut a chicken in half.
Rubbed with garlic olive oil and Yardbird/John Henry Sweet Rub mix.

Brined some pork loin chops
Rubbed with John Henry Sweet Maple rub.

On the charcoal for some indirect cooking.

Made some Lyon Potatoes. With russets, onions, butter, garlic, and a drizzle of white truffle oil.

Looks delicious and please tell me more about the potatoes.

If you have a mandolin or V slicer, it could not be easier. A knife will work too, just takes longer.

Thinly slice 4 large peeled russets and 4 onions.

Cook the onions in some olive oil until deep brown with some garlic.

Layer 1/3 of potatoes, then 1/2 of onions. Salt and pepper. Drizzle a little melted butter.

Repeat

Drizzle the top with some more butter.

45 minutes in a 400 degree oven.

Careful with the V slicer. Always use the food holder.....too easy to cut yourself without it.

Don't ask me how I know that......ouch.

I was thinking about you last night when your team creamed my team. First time I have watched the Niners this year. They were impressive and fun to watch.  They made it look easy.
