Cowboy Goulash?

Indeed. I was on Youtube, going down the rabbit hole 180 degrees from what I started off watching. I came across this guy, who is a Chuck Wagon cook and he was making something he called "Cowboy Goulash". I watched the video and liked what he was doing so I decided to give it a crack and I have to say, it was delicious. He sells his own seasonings and used something called "Red River Ranch Original Seasoning" in this dish.

Well, I don't happen to have any of THAT but I do have an endless supply of other seasonings. I looked at the bottle of his Red River Ranch Original and it looked an awful lot like the Peppered Cow rub that I adore, so....I used that in its place.

I liked it so much that ate 2.5 bowls of it :P

I have 2 quarts of it in Foodsaver bags for when I am ready for more. Plop a bag in a pot of water and let it simmer. I love cooking once and eating many times from that one cook. Easy meals!

It really was, so much so that I've already scarfed down my reserve I had in the freezer, lol. I need to make more! I am thinking about adding some stuff to it to experiment, maybe a little jalapeno and top with some jack cheese.

  Looks good , Your cornbread looks perfect too.  I looked at his site and there is a lot of good stuff there. The carnitas look especially good to me this morning... must be hungry.

I would think so but I will tell you it is heavy on the tomato so you're going to get some carbs from that but should be manageable!
