cooking witih my dw smoker under an ez-up canopy with sides now with photos

I have to cook some butts tonight for a cater job on thursday.  Temps here will dip into the teens here (NC) it was 65 yesterday.

i have an ezup with the sides that i can attach.  i was thinking of putting three sides up in hopes of stopping the wind a bit, and possibly holding in some heat.

anyone have any experience doing this or ideas

That should work fine. You'll have plenty of ventilation. I've done the same sort of thing, only in the storage shed with the big door open.

Cutting the wind makes a huge difference.

A pop up with sides can definitely help with reducing the wind chill effect on your pit....Something else to consider doing - get some insulating blankets to lay on the pit. Be careful and choose something that will not flame up ( avoid synthetic blends that will melt). Wool may work well if you have access to old G.I. blankets...

A welding blanket works well for insulating a pit also ;)

i've done catering out at the lake.  really windy there.  i used the same pop up w/ the 3 sides.  it works ok.  it will help w/ temps for your pits better and make you warmer too.  bring a flask and stand close to the smokers.   :)  use you ice chest to block wind also inside the pop up.

got it all set up.  i am cooking 16 butts (avg 8# each) tonite.  temp is hovering at 220-225.   the floodlight and the enclosure seem to be doing the trick.  i did this same gig at halloween and had to do the butts in 3 rounds on my 75.  if all goes well this will make my life easier.  no pics of the uncooked butts but will get some in the morning.

i am also cooking 54 racks of ribs.  once the pork comes off, i will cook them for 3 hours at 250 then put 6-8 in aluminum pan with apple juice and foil for an hour and 45 minutes to steam on my bq grill at 350.  i did a test run this weekend.  they were done at this point.  i sauced them and let the cool in the freezer )wont need that tomorrow it will be 30 degrees.  i was able to heat them at 350 for 10 minutes on a side.  that set the sauce and brought them up to temp.

a little more fall off the bone than my liking, but the folks will like them

dude.  yu da man.  you got this buddy.  is your dream works smoker insulated?  the light w/ help w/ keeping some heat in there also.  did you bring the flask like i told ya.  a little nip to keep the core warm.   ::)

the shelter stayed suprisingly warm.  The halogen floodlight helped.  i topped off pellets at 10:30 and went to bed.  wife (a night owl) did the same at 1.  i did it again at 3:30 and 6.  used about a half a 5 gallon bucket during the night.  below are the butts at 6, all between 165 and 180.  will wrap and bring to 200 then cambro and rough pull later

then on to ribs

although tempting, no flask

Dang that smoker is a meat monster!

Sounds like pellet consumption is pretty good with the temps and load of meat you have.
