I don't know why, but somehow I had the idea of cooking some ribs next weekend... ;)

32 degrees outside.  oh well....
here are all 16 butts.  just about done.  i moved them to my pull behind gasser, cooked them wrapped to 200 +/-

first load of 21 racks of ribs.  avout 45 minutes in

I can't believe that you wasted space like that. You could've fit at least one more rack of ribs in there! ;D

sorry for all the pics.  it was 18 this morning.  not used to that.  tomorrow i have to get up at 4 to cook chicken.  i moved my traeger and outdoor gourmet into the shelter.  they will heat beans, q, etc in the morning


ribs after steaming in pan.  i sauce them, quick chill and fridge till i reheat onsite

I've never seen that much ribs in a fridge before! Wish it was my fridge LOL.
Looks like you have it all under control except for the weather. By the way..those ribs and pulled pork look perfect!

it really went well.   we fed 250 folks.  I had 6 racks of ribs and 1 tray of q.

all in all i cooked
16 butts
54 racks of ribs
124 drumsticks
84 thighs
30 portobellas (see below, they are easy and the vegans loved them)

beans (w/pork and wo)
two slaws (vinegar based and mayo)
10 gallons of tea, and 8 gallons of lemonade

I was whipped but it is always satisfying to see people enjoy what you produce
