Doing a fridge cleanout this weekend so dinner was a quick taco with cheese, jalapeno/cheese sausage, Hawaiian chili pepper, Shishito pepper, onions, Pico de Gallo, and sour cream on a flour tortilla.

It was too full to fold neatly so I thought I might have used too much stuff. I was wrong.

Turtle, your soft tacos look delicious. I make them almost the same way. The exception being just plain pickled jalapeno peppers. Mine are also too big to fold, but they taste a lot better when you get it all over yourself. What type of yellow cheese are you using? I use a Mexican blend of queso fresca and sharp chedder.

The Shishitos are pretty mild (except for about one in ten that surprises the Hell out of you). The Hawaiian chilies are small, red, and hot (sort of like Thai bird peppers). I use them whenever something needs some "zing" since we pretty much always have them in the yard.


What type of yellow cheese are you using?
Just sharp cheddar this time. I usually use either that, pepper jack, or a blend of the two.

Like it!....but curious about the name of the peppers....is "Shishito" the word you exclaim when you get that "1 in 10" HOT one? Or is it Japanese for the effect of eating that 1 in 10...? ;)

I could hammer one of those!!  Looks good!!

I am in the process of cleaning out my refrigerator and am looking for the next meal that is a bit different.  Looks like I have lots of choices, including cubed elk steak.  May have to make some chicken fried steak with, as Hub puts it, GRAVY, lots of GRAVY.

Someone once suggested to me to go ahead and fold it, just have another wrap underneath to get another started.   :D

Turtle, in Texas, we capitalize "Illiterate Aggie" because we use it as a proper pronoun phrase.
