Great video, indeed!
When flipping and glazing I find it easier to pull the grate out of the cooker, throw the wings in a large bowl, toss with sauce then put them back on the grate and put the grate back in the cooker.
You can also double the capacity by getting another 17" grate (Weber at Home Depot) and rest the second one on the handles of the first, with the wires running perpendicular.
