Mock burnt ends

I am going to try and do this today... Have a nice little chuck.....Got some low salt rub on it overnight..will smoke it and foil it about 140 and then take it to 190..cut into chunks and throw on my extra hot gasser to finish them up....it I flop I may need to buy a dog...... ???
