It's a dreary cold rainy day. Don't want to be outside. Luckily Zatarain's makes a number of nice rice mixes. Tonight I cut up the meat from a couple of chicken quarters I cooked the other night. Added the chicken pieces to some Zatarain's Spanish rice mix. The mix calls for a can of diced tomatoes, but I used the diced tomatoes with green chiles for an added kick. A great bowl of comfort on a day like this.
