Internal temp for corned beef

Seeing a range of 155 to 190 degrees. Mine is on the Mak getting a little smoke. Plan on foiling in a bit to steam.  Want to slice thin for sammies.

What say the experts?

Here's a Corned Beef I smoked on my MAK a while back that was pulled at 185ºF and rested under a foil tent for 20 minutes.  Although it turned out wonderful I would take it to 195º-200ºF and FTC for an hour.



Here's what I said on my Blog at the time ... " The Hickory Smoked Corned Beef Flat Cut Brisket turned out wonderful.  The meat was tender and moist with a pleasing smoke flavor.  Next time I may take the Corned Beef Brisket to 195-200ºF and FTC for 2 hours to gauge the results.  None the less, it’s a luscious way to prepare and serve Corned Beef. "
