A Little Heat For My Friends
« Reply #-1 on: March 18, 2013, 05:06:17 PM »
If you “need” to add some heat while making sausage, or jerky, or anything else your heart desires, here are some possibilities.  I made a trip to the Savory Spices Shop in Huntersville, NC yesterday.  Initially I was only going to buy some Cure #1 and some nutmeg.  While perusing what else they had to offer I noticed the ground jalapeno powder, the ground habanera powder and the ground ghost pepper powder.  Into my basket they went.  Before I finished checking out, the clerk said I should take a look at the Ghost Pepper Salt.  Apparently when they make this salt, they use some chocolate with the ghost pepper powder.  I tasted the salt - 6 tiny little grains of salt.  OMG!!!  It was HOT, but most of the heat disappeared shortly, leaving the front of my tongue slightly blistered.  I needed a big drink of water when I got back to my car.  Used sparingly, this should satisfy even those who crave “heat”.

Check them out on the web.  Look under Savory Spice Shops.  They originally started in Denver and have been expanding quite a lot in recent years.  I can usually finds the more "exotic" spices there.  I also like Penzey's, but they don't always have what I want.
