Leftover pork & hominy soup

Mar 25 2013

I woke up to about 6 or more inches of snow this spring morning! I waited until noon to clean out my drive when the snow had just about stopped. I had parked my two vehicles on the wrong side so had about 8 to 10 inches to clean out on the other half. It was so wet my chute kept plugging up on my blower so took longer than normal. I told my wife I was not going to cook and we would eat leftovers.
I found some pork and hominy soup in the freezer I would have.

After I had the drive done I went to pick up the grandson, they didn’t have school today. His Mother works and his Dad works from home and is on the phone and PC all day so he gets more attention here with Grandma and Grampa. I baked some cornbread, Miracle Maize. I like it better than any homemade I have done. Then I baked a batch of Ghiardelli’s ultimate chocolate brownies, the grandson helped put the icing on. Then he and Grandma kept asking if they were cool enough to cut!

Our daughter in law got here about 6 pm from work, had a brownie and took some cornbread home with her, the grandson too!

My wife was going to have some pizza but decided to wait until tomorrow and had some chicken noodle soup, rice and cornbread. She is just over the stomach flu. I had my pork and hominy soup over cornbread, topped with some raw onions, hot sauce and fresh ground pepper. It was good! Don’t ask for the recipe, I looked and didn’t have one; I must have just thrown it together. I know it had leftover pulled pork, hominy and pinto beans in it.

Tee when I was in the service all the guys from the NE said I could not be from Ohio with my accent! Love the southern food and do some pretty good soul cooking too! Don
