I had a couple of Costco Boneless Pork Shoulders. Just uner 15lbs total weight..



I rubbed them down with some Billy Bob's Que Butt Rub & Fine Swine and Bovine Rub..



Decided to do an overnight smoke and chose my natural gas smoker. I put them in at 9pm and figured they would be done in the afternoon the next day. I set the oven thermostat I installed in the smoker to around 210F and loaded the chip box with cherry chips...



I woke up at 7am to this...



The lower one's IT was at 142F! Dang just hitting the stall. I knew I was in for a long day :o
So I bumped up the smoker temp to 270F to speed things along.

The lower one was finished at 7PM at a IT of 192F and the top one did not hit 190 until 9PM...24 hours later.



These were the most stubborn butts I have cooked to date! They came out very tasty so they were worth the wait. My gas smoker usually does not have trouble finishing butts pretty quick although I did only have it at 210F. It does adjust the flame automatically with temp changes outside due to the modulating thermostat. I know it kept good temps overnight because the Maverick never alarmed. So always give yourself plenty of time when smoking butts. I gave myself plenty and it still was not enough. It was ok though because my wife and I had some grilled Rib-Eyes instead :)

That was a heck of a long cook but I bet they were worth the time.......looks great!!

Wow that was a long cook, but it looks like they came out great! I love the color of the bark.

Hey looks great!   But you know that was a lot of pig so smoking at that lower temp would make it go for a long time

That was a long cook....I did about the same amount in my MES for Christmas and it was a 15 hour cook at 220.
Those look really moist and I know they were great tasting
