Hello from New Jersey everyone! I just discovered this forum while browsing for a good BBQ forum on Tapatalk and from what I have seen so far this is a very friendly and comprehensive site. I have been barbecuing for years on gas grills, but earlier this summer I discovered charcoal and have been cooking on that all summer. In fact, since becoming addicted to cooking with charcoal I have purchased two charcoal grills; both Weber kettle style grills and I love them both. One is a standalone Gold model and the other is a Performer model with the tabletop. I had experimented with cheaper charcoal grills in the past but after using the Webers it is easy to see that you get what you pay for. I regret not doing charcoal much sooner in life and now I find myself cooking with charcoal at least four nights out of every week.
I would really like to learn how to cook using smoke and would also love to purchase a proper smoker someday. My short term goal at this point is to learn how to cook a killer brisket.
