Smoked chicken enchiladas

It's beyond cold here.. Needed some spice. I have never tied these but have seen others make them. Rubbed some chicken breasts with Brown Digga Dog and smoked for 40 mins then bumped to 350 to finish. In the meantime chopped some green peppers onions and added some green Chili... Sweat them down, added cumin, Chili powder, tomato sauce and cream of chicken soup. Once the chicken was done I added it to the rest of the ingredients added shredded cheese and sour cream and let simmer for 30 mins. Once it was done rolled up in tortillas topped with some spicy taco sauce and shredded cheddar. Baked for 30 mins till folded brown. This is a keeper!

Always have smoked chicken and pulled pork in the freezer... makes for a quick dinner when you don't feel like really cooking.

I love enchiladas/ burritos... great food for a chilly evening.

Oh yeah!  That's my idea of some really good enchiladas  :)  Smother 'em with a pile of sliced jalapenos and you'll forget about that nasty old cold weather in a hurry!
