Yes, it's true.  I just found out about a small butcher shop that sells only the products they raise on their farm.  They have Wagyu beef as well as several varieties of Heritage pork and lamb.  I saw some of the nicest pork bellies that I have seen anywhere while I was talking to the owner's father.  They were thick and very meaty and looked tempting.  I'll be buying some in the near future.  I want to make some of Cliff's Cider Mill bacon and this would be the right way to go.

Brisket is $7.50 a pound right now.  This is about the price of some Snake River Farms Waygu we had at the Fall Gathering, minus the shipping charge, of course.

Yeah, SRF isn't bad until you get to the shipping.  Luckily, I too have a local provider of Wagyu (he sells Strube).  He runs Wagyu specials pretty regularly.  Even when I can get it (packers) for $5.99/lb, it is hard to justify the price.  Don't get me wrong.  It is fantastic.  Honestly though, the difference is a bigger deal to me when it comes to steaks than when it comes to brisket.  Cooking with a heavy rub and smoke to probe tender is what cheaper cuts are made for.

Yup, I take select briskets at under 3 bucks a lb and make em butter knive tender.........and I agree on the world of difference when it comes to steaks.

Of course if I could afford Waygu all the time, that is the way I would go  8)

I have never  tried Waygu but that's on the bucket list of things to try :)
