Greeting to all. 

I look forward to learn from the experts here and share my learning experience.

I have been trying to decide on a smoker - electric vs gas smoker.  I have a weber genesis gas grill that I refurbished last year.  Then recently, I started reading about pellet grills and smokers.  This added a new twist to my thought process.  Now I changed directions to look at pellet grills vs. gas smoker.  In part from your conversations what I seen thus far.

In addition, the flexibility of using a gas smoker or pellet grill as an outdoor oven is something I never considered before.  This opens up new possibilities to do a chinese roast duck or BBQ pork - Char Sui in outdoor oven/smoker.    This reminds me of walking down the streets of Chinatown is San Francisco.
