Looks fantastic!  Only change I would make is to use straight horseradish.   And thank goodness Lent is just about over--that means MORE red meat!    Hallelujah!  You guys were killing me with the posts of all the rib eyes, etc., for last night's dinner!

I love the edge to edge pink you get with cooking at a lower temp. Meat looks just perfect!
