Chicken casserole - with that homey touch

A casserole was in order with the leftover SRG chicken, along with smoked Gouda and sharp white cheddar

Thanks guys... I often wish I did not live so far from the rest of you folks.  However, retirement is less than 3 years away, and we plan to RV it across the entire country visiting places I've not been in decades.  Maybe even be lucky enough to time it right for a get together.
