I'm Wali and I smoke waaay too much. Mostly meat, but pretty much anything that'll fit in the smoker. I stumbled into your site looking for a water powered sausage stuffer and found some of your cooker builds pretty fascinating. I cook mostly in two stacked garbage cans and its time to upgrade (they've bout rusted away). I also dabble with sous vide and rigged a turkey roaster with a pid and circulation that varies +/- 1/10 degree C throughout the bath (starts a VICIOUS shoulder). You might be able to tell I think it's kinda crazy to buy something I can build for twice as much and take five times as long getting to work right.
