Hello all,
Just joined and live just north of Vancouver Washington. My neighbor introduced me to his TBE and had to go get one. I love to BBQ, but the funny part is my wife heard on some TV show that the "Char" causes cancer and won't eat anything off the grill now!! More for Me!!

Welcome from mid Alabama. The "char" that causes a problem if actually "burned" good grilling won't get you the burn.

If the char is black and crunchy...it has been linked to a pro-carcenogenic compound. But-  If you sear to achievedark, well browned grill marks - no problem. What you are doing is called the Maillard reaction/effect ( will not bore you with details here see:  http://www.merriam-webster.com/dictionary/maillard%20reaction  - plenty on the 'net ;))  And..if you finish your meat on -say...one of the new GrillGrate griddle plates http://www.mygrillgrate.com/The_GrateGriddle_13_75_p/griddle-13.75.htm....you will amplify the Maillard reaction to ALL OVER the meat surface - instead of just where the grill grates "mark" the meat. Tho they are traditional...and we think of them as "pretty" - that is the only place the the Maillard reaction adds any taste tot eh meat. SO - the case for the flat griddle approach to finishing a steak. A hot cast iron skillet can work for this as well.
