I acquired an older GMG DB for a very good price and just needed some cleaning (very dirty I don't know if the previous owner ever cleaned out the grill) and a few new parts.(thread about it is here:
http://www.letstalkbbq.com/index.php?topic=22175.0) I had not had a chance to cook on it yet, but this weekend I had some free time so decided to cook a rack of ribs. I had some ribs that I had seasoned with Gun Powder and frozen, I pulled those out and let them defrost overnight, next day I rubbed with a little more GP and put them in the smoker on the upper grate and turned it, let it go through the cycles and when ready set it to 180 for 1 hour, then 225 for the next 2 hours, pulled and wrapped with foil with some brown sugar, honey and butter then back in smoker for 2 hours @ 250. Pulled and took out of foil and put a light coat of BBQ sauce and put back in the smoker at 275 for 40 minutes.
These ribs turned out really good and I was surprised at the difference in the ribs done in my Bradley compared to these ribs and they were almost cooked the same way. Definitely makes me excited to do some more cooks on the GMG.
The grill had the old style heat shield and grease tray.
With these, I was seeing a very large temp discrepancy from left to right. I order some of the new stainless steel heat shield and grease tray and now it is much better. (30 degrees or so)
