I am able to get good tomatoes that were brought up from Tennessee; so I made this salad to have with some pork loin ribs. It makes a lighter side dish to have with BBQ in place of potatoes or beans. I never used a recipe before but below is one to use as a guide.
Recipe:
Cottage cheese tomato onion salad
½ to ¾ pint of Cottage cheese
2 Garden fresh tomatoes, ½ dice
1 medium Sweet Vidalia onion diced
Serve with salt pepper or seasoning salt
Stir all together and serve. This salad does not keep well overnight so just make what you will eat.
I have no idea where I got this from, it seems like we have always had it when I can get good garden tomatoes to use in the summer. In my older age the Vidalia onions are a must; any others bother me too much. It is the only way my wife eats raw onions and she loves this stuff; a lot of times she makes it.
The above recipe is about what I used with this batch and makes 4 servings. I used to use salt and fresh ground pepper but now I like Penzey’s Sandwich sprinkle, it is garlic salt with herbs. I have never used a recipe so I guess a good rule is to use about equal volumes of cottage cheese and tomatoes and about half on the onions. I prefer small curd cheese but use whatever you prefer.
This makes a good side dish to have with summer BBQ
