This is from my 13 lbs turkey carcass
Ingredients
1 carcass. Break it down. Crack the leg bones open. You want that marrow
1 gallon of water
2 medium onions
1 medium carrot
Some celery
Some garlic
Some Bay leaves
Some thyme
Some turmeric
Some.... Look at the picture

Heat come oil, I'm using ghee, sautee the aromatics. Get them slightly browned.
Hey LOOK! Some leftover wine, pour it in there and reduce.

Then get all the ingredients in, mix that mess up.
Get a gallon of water, pour that in.
(http://i1175.photobucket.com/albums/r636/emtawali/20141226_093238_HDR_zpsxacrkzfu.jpg) (http://s1175.photobucket.com/user/emtawali/media/20141226_093238_HDR_zpsxacrkzfu.jpg.html)
Bring that to a gentle boil and place in a 200 degree oven and forget about it for 8 hours.
After 8 hours, get that mess on the stove, medium low heat, reduce to about 3/4.
Strain, refrigerate. Skim fat off.
Look at that rich stock. That's what store bought wishes it was.

Freeze in 1/2 cup portions (red) or cubes.
(http://i1175.photobucket.com/albums/r636/emtawali/20141227_170219_HDR_zpsdqdhsr1l.jpg) (http://s1175.photobucket.com/user/emtawali/media/20141227_170219_HDR_zpsdqdhsr1l.jpg.html)
Now go forth and cook good food.

Ran into them at TJ Maxx. Amazon does have them as well.

Great looking stock. ;)

Some comment, I have never seen stock go into the oven. Going to try that.
Some question, ghee,, do you make your own? If so can you do a post sometime when you make it.
Some Bookmark as a reminder that this is a good post ;D

Waste Not Want Not 8)
Most people(me) would toss it in the trash. Thanks for showing us another good use.

Yes I make my own ghee.
I'll make a detailed post in a week when I make another batch

Stock in oven frees me up. I can throw it in there at bedtime.

That is some great rich looking stock.
And I agree; a turkey carcass is a terrible thing to waste. Our turkey carcass gets turned into soup every year.

Two of the best things about the holidays . . . . .
Turkey and Ham/bean soups ! ! !
I'm taking this recipe over to my mom this afternoon.
