Title: Crockpot Gumbo

What to do with all that !$@& leftover turkey you can't look at anymore.
Let's make gumbo!
Gumbo is a thick stew thickened with file or okra or roux or some combination of the three.
I make gumbo to get rid of leftovers, smoked chicken, turkey, butt , brisket , ham all taste great in gumbo.
Large crockpot
2 diced onions
2 small or 1 large diced bell pepper
4-5 diced stems of celery
1-2 tsp minced garlic
1-2 lbs "meat "
8-16 oz frozen okra ( I prefer whole)
Put all the above  in a crockpot  add water to 2/3 full & cook.
About 30-45 min prior to serving  add premade roux mixed with warm water slowly stirred into pot.
Add 1-1 1/2 lbs sliced sausage ( usually smoked sausage)
About 15 min prior to serving add Cajun seasoning, ( or Lawry's & pepper) to taste.
( a lot of salt & pepper flavoring comes out of the meat & sausage, I've learned from experience ,screwups, that the amt of seasoning needed  varies greatly!)
Fine tune thickness with a little more roux ,
Cook rice, French bread, and serve

Lost..that looks great to me. Gonna have to try it. I make mine with shrimps and sausage, but I'm from OHio. I can make a mean roux tho.  Pammie ★*˚°。°

LA, that will be some good eating. I could see myself with a bowl of that on a cold winter's day.

Pammie, if you don't mind, leave the shrimp out of my portion, please.

Hey TMB, glad to see you here. I meet the finest people all over this here world wide internet. Tommy, as most of you know, is the world's finest mastermodifier of outdoor cooking equipment. You give him a finished product and he'll give you 20 modifications to make it better. He is most famous for his invention of the Tommy Ring used in TBE and SRG cookers. I could listen to him for hours talking outdoor cooking.
