Title: Need advice on cooking boneless chicken breasts on the pellet grill
Post by: nukeofficer on March 21, 2017, 06:41:53 PM
So I'm brand new to the pellet grilling world. As a matter of fact this will be my first cook. I've decided on boneless chicken breasts. They are currently in a simple brine. I own a Pit Boss 700FB pellet grill and was wondering about temps and times and all that fun stuff.

Any tips are welcomed.

Thank you in advance.

I just cooked my first chicken parts on a pellet cooker Sunday so I'm just as new as you. What I did was set it at 375, sprinkled secret weapon on breast and thigh, neither boneless and cooked for an hour. when i checked them the breast was at 178 or 180 don't remember. Turned out really good, not dry. Good luck and enjoy. Wish I would have bought one sooner.

We've all been in your shoes nuke, I mean we all started from somewhere. To simplify your thought process, just think of your pellet grill as an oven that lends a kiss of smoke at 350F. Whatever you can do in an oven, you can do on a pellet pooper. Just remember boneless skinless breasts dry out easy, so they will need a bit of fat or oil. Try this. Cut in half lengthwise, but not all the way thru. Rub with evoo, and a seasoning or rub of your choice. Now add some roasted peppers, or cooked bacon, and a slice of Swiss cheese. Close up with a toothpick or two. Cook at 325 - 350F until an IT of 160. Pull off grill and cover for 5 minutes temp should be about 165F when done. Enjoy!

Well my inaugural cook on the Pit Boss is in the books.
Chicken came out juicy and flavorful! I can't believe I waited this long to be a part of the woodpellet grilling crowd!

Thanks to everyone who offered up advice. You guys ROCK!!

Looks great!!

I avoid  boneless skinless breasts as I always dry them out.  Been doing a lot with thighs.

Looks like you nailed it tho.

Whats the purpose of the bacon?
Will it crisp up?

Only thing I'd add is to use foil under the chicken breast after they are cooked so when you add the sauce it will not drip down and make a mess.

When done simply remove the foil.   ;)
