Today I cooked some chicken legs, separated into deboned thighs and lollipops. I used mayonnaise to adhere the rub this time.
Cooking time was 2.5 hours on the kamado with some cherry wood smoke at 250°F (and short time at 280°F). At the end I glazed the chicken with maple sirup. Plated with white and green asparagus salad.

Like the syrup idea. Color looks your awesome. Nice meal

Really pretty plating, and the chicken looks fantastic!
-
I have to try chicken again because yours looks fantastic.
One question, skin on or off?
-
Wow! Those look fantastic.
I like doing lollipops. One way I do them is take a piece of bacon and season one side with black pepper, salt, and brown sugar. I then coat the chicken leg with a rub and then wrap the bacon, seasoned side next to chicken, around the leg and secure with a toothpick. Mop with a sweet BBQ sauce the last few minutes of grilling or in the SRG. l like the maple syrup idea.

Souns good, thank you. Another cool idea is to place the lollipop inside an holed half of an apple.
