Title: I like big butts! Infrared butts that is ;)

My brother in-law ask me, can you smoke me a butt for work?    Well I said yes and this is the one he brought me. 

10lb 11 oz butt that is and he said, I want it done in that infrare cooker of yours since you talk about it all the time.
So here it is
All rubbed and ready to go into the SRG

Here is the butt 15 mins into the cook

Six hours later (yes six hours) it never takes six hours

J.T was very impressed with the butt and how it turned out  8)

We are all very impressed with your butt as well Tommy  8)

-6- hours for a 10 lb butt is impressive!! Sure beats settin up all night adding charcoal!!

Thanks, normaly I wouldn't post since I do these alot and results are very good.   But this butt was different since it took so long which never happens (4.5 was the longest time for a butt in the SRG's) Just thought I'd post to show even my thinking is off at times  ;)

Do you think the variation in cook time wasbecause of the size of the butt? Or was it more lean than some others you did in the SRG?

I just did a 10.5 lb boston butt in the Smokin Tex...and it too 14 hours Tommy...Of course - I did not have it turned all the way up to the max. temp of 250F....It was at 220F.

So - the SRG time is amazing to me, and the moisture of the one in your pictures looks great. I may have to try an SRG cooked butt!

I think the one thing I am curious about it the amount of smoke flavor when cooked in the SRG.....can it compare to low and slow style cooking?

Well Tim, how did you like the pulled pork at the cookout, it was a 4.5 hr butt cooked in the SRG.  How did that butt compare to other pulled pork you have had?

Now I wish I had the new SRG so I could compare the two types of SRG's to see which one is better. 

Moister in the pulled pork is outstanding with very little moister loss compared to my Bradley smoker
