Title: Jalapeño and cheese stuffed wings
Post by: Scallywag on February 02, 2014, 09:15:48 PM
Wanted to do these again. Started with this..
Made some croutons
(http://img.tapatalk.com/d/14/02/03/ranehezy.jpg)
Chopped up some jalapeño mushroom and fried onion bits and added to a pan with the croutons... Seasoned with Old Bay. Added chicken stock and reduced till I had a nice firm stuffing mix.(http://img.tapatalk.com/d/14/02/03/a5a6e2u6.jpg)(http://img.tapatalk.com/d/14/02/03/u3ahyze9.jpg)(http://img.tapatalk.com/d/14/02/03/e9u7amen.jpg)
Add some grated cheese
(http://img.tapatalk.com/d/14/02/03/aju6ehen.jpg)
Now let's get to the wings.. Split them apart..
Deboned..
And stuffed
(http://img.tapatalk.com/d/14/02/03/uju9ade7.jpg)
Smoked for just over an hour using GMG fruit mix pellets
(http://img.tapatalk.com/d/14/02/03/eme3u3ej.jpg)
Flour egg and Panko then into the deep fryer for 5 mins.
Drizzled with Franks Red hot wing sauce and served with Ranch dressing.

Great looking wings, now I'm hungry again after stuffing myself like a Thanksgiving turkey during the Superbowl.

I can do about 2 per minute. Once you get the hang of it it's pretty easy.
