Title: TBE Hickory Smoked BAMA RED Tri-Tip
Post by: muebe on December 02, 2011, 11:33:49 PM
I had a tri-tip that was rubbed with BAMA RED rub that I got from GusRobin. I put the tri-tip in the TBE basket with the bunk bed shelf one step up from the bottom of the basket. The fat end of the tri-tip was sitting on it. Then I skewered the small end of the tri-tip so it was supported and centered at the top of the basket. I placed the basket with tri-tip in the TBE chamber cold and fired up the smoke daddy with a load of hickory. After 30 minutes of cold smoking I fired up the TBE burner. I Kept the smoke rolling through the entire cook. About an hour later the tri-tip hit 140F. The tri-tip turned out perfect. Plenty of smoke flavor and very juicy. The BAMA RED rub was like a paprika version of gun powder ;D
