Put a light coating of EVOO on 2-8oz. bison ribeyes. Then added S&P, a nice dose of M3, and a bit of Way Out West. Into the refrig. for 8 hrs. Got the Grill Grates heated up good and put a potato packet on that contained potatoes, onion, garlic, and a bit of hot pepper oil. After 20 min, threw the bison steaks on with a little handful of hickory pellets. Grilled the steaks to 125F before pulling and resting. Very nice indeed, I love this bison meat!

How did you like the blend of WOW and M-3, Gene? I have considered a pre-packaged blend of those two.....

I really like the blend Tim. Gives a somewhat fuller flavor than either can give by themselves without crowding the other out. Your blends with low salt allow these two to compliment each other very nicely!

Pappy try it when you get a chance. I believe it's the "healthiest" red meat available and remarkably is very similar to beef in taste. It must be cooked at a bit lower temp. because of the lower fat content, so it does not dry out.

In addition to elk, I love buffalo/bison meat. Both meats are extremely low in fat and create a problem in cooking, namely overcooking. Both these meats are best cooked, IMHO, more towards the rare side.
On the other hand ground buffalo makes some fantastic chili. I won a local chili contest several years ago with my Buffalo Chip Chili.

BTW, your steaks look fantastic. I may have to play with the M-3 and WOW. Sounds intriguing.

price wise it is more expensive than beef, at least here in Georgia.

Most Whole Foods Markets and Fresh Markets carry bison in their meat counters. There are several ranches that raise and process for shipping by the piece or half animal. High $$ but very good meat.
Google bison of buffalo meat.

Guess I missed this one. Never tried the blend of M-3 and WOW - they are both on my "go to" list"! Will have to try the blend. I really like not having so much salt in the rub - lets me adjust the salt myself.
Have not tried ground bison - will look for some next time I go back to ND. Should be interesting.

Dang! I went to the Savor Spices web site a few days ago specifically to buy M-3 based on one of Muebe's posts. I couldn't find it listed so I figured that it's under development (also based on a comment in one of Muebe's posts) so I just ordered the rest of my list. The order arrived yesterday.
I wonder how I missed it?

When I was a kid and living in Michigan, there were a chain of Northern Michigan supermarkets called Olsons. I do not think there are around anymore. They had local farms and raised their own Buffalo, and sold it in the store. They also crossed beef cattle with them and called them Beefalo. I remember eating the hamburger and it was good; do not remember any eating any other cuts.

Those are fine looking steaks. Stay on the rare side and bison is some fantastic meat! Growing up in ND - we had bison burgers and steaks on a regular basis. I do like the mix of M3 and WOW - saw it in another post and started trying it. Really good. The best part - these don't have much salt - so you can mix them without getting blasted by salt. I really like that!

Gene has given you the correct information except I believe M3 is in the development stage and was given to members by Tim for testing so not available for purchase from the website as far as I know...

We have not developed a label for it yet....But - will still del it to individuals as long as we can get feedback to help finish developing the product.
It is looking like blending it with W.O.W is really getting popular. And...there is another blend that we make for a "known professional" competitor that I have experimented blending with W.O.W....really - really good....
More stuff coming as soon as I can justify artwork, graphics, label design and printing. Amazing what that part of it costs.

oh ya. M3 is a great rub/marinade. i use m3 w/ wow on ribs, steaks and burgers. fantastic on everything i use both of them on. i really love the savor spice line. its a fine grind rubs that soak into the proteins and are very low on salt. my favorites are bbq savor, wow, chicken savor, super pig. steak savor and love FSB. all are excellent products that i use every week. 8)

I agree with sparky. I really like the full line. My favorites though are WOW and M-3. My daughter likes using Mo' Rockin Chicken - she says it's perfect on everything. We all like the low salt - we can use salt as a seasoning to our taste, not worry about the rub.
