On Wed. I rubbed 4 lbs. of buffalo short ribs with EVOO, then put a blend of M3 and WOW on top, vac. sealed 3 days until this afternoon, added a fresh coating of Tee's magical powders upon opening, and then threw them on the pellet grill with oak/hickory/cherry @ 225 for a good while. At some point a Manhattan OR two sounded good to help with the wait. Finally.......they were done, served with garlic-herbed-red potatoes , a bleu cheese laden garden salad and a few New Belgium 1554 black lagers. Dessert was some very sweet watermelon. Absolutely wonderful! I'm ready for a good cigar and a walk!

LOL weddings are a dime a dozen - where else are you going to find this mix of herbs and spices?... Just sayin'... ;) ;D

Tim i'ts my first time for buffalo short ribs, but have had several different cuts of buffalo before. Let's see, the M3 does it's magic and the WOW fills out the flavor, without ever over-powering the flavor of the meat, what could be better? I'm truly sold on this mix of two great stand on their own blends! Tim, thank you, thank you, thank you!
The Manhattans should never be forgotten!!!!!!

M3 is excellent. Best part of Tim's rubs is the low salt. You can add salt as you like, but the rubs don't hit you in the face with the salt like so many commercial rubs do. I really like this. I don't like a lot of salt, so I can add as I like. My wife LOVES salt, so I can add more to her portion while keeping my portion with lower salt. Just like adjusting the temp / final temp of the meat, I can control the salt on the protein. I really like this.

i haven't had a manhattan in a long time. great drink. your ribs look killer my friend. serve me up. 2 manhattans and then a plate of that goodness. milk on side plz. 8)

Totally fantastic cooking Gene! I love the magic combination of M3 and WOW. I mentioned in a previous
post that Tim needs to look into making a combination of these two and calling it Magic. Because it is!
