Done.  About 8 hours total.  Taste is very good.  They are cut and in a paper bag in the fridge.  Should be even better tomorrow.

That little heating element put out plenty of heat.  This is on the highest setting.  I ran them until 152* internal on the Termapen so they are fully cooked but did not sweat out any fat.  Nice snap to the casing too.

I definitely like the 20-22mm casings better than the 17mm I tried the other day.  May not be straight sticks, but the coil method worked just fine and 5 pounds is perfect for the WSM racks.

And if a Moderator wants to move this up a level in the forum to "Charcuterie & Food Preservation" instead of the sub-forum of Dehydrating, that's fine with me.  I had originally intended on using the dehydrator after laying on the smoke, but since the heating element put out plenty of heat, I went with the WSM for the full process.
