Just picked up a Big Easy, now what?

This past weekend Big Lots was having a 20% off sale.  I headed over not really expecting to find anything too interesting.  I was almost out the door, empty-handed, when I noticed a lone Big Easy sitting with some other kitchen appliances.  I went over to check the price.  It had three different tags -- $99, $69, and $49.  So I took it up to the register.  The cashier honored the lowest price $49 and then gave me the 20% discount.  A brand new Big Easy for forty bucks! 

Well, I put it together this morning and now it's seasoning.  What next????

WOW killer deal!!!

After you season it real good, drop a yardbird in it and give it a go.   Make sure you dry the bird real good and oil it down before you place any rub on it.  If you have water on it, it will not crisp the skin.

Make sure you place a temp probe in the thigh and not the breast bring it to 165 to 170 and your done.

Oh, lid on til the bird looks nice and golden brown  then remove the lid to finish the IT

TMB:  That's my wife's plan for this evening as well.   I'm gonna do a chicken so that next time I can do a turkey.  Now what's the best way to cook those spuds?

The easiest is to smear the skin with butter and seasoning and check for doneness starting about 30 minutes. (anyway
that's how I do it )

I clean the skin real good and coat with oil then salt and pepper (make sure to dry before oil is applied)  cook till IT   of 195 to 200 then your ready to go.  This takes anywhere from 30 mins to 55 mins depends on the cooker and the size of the spuds

  No one mentioned the Tommy Ring. Go get a cheesecake springboard pan and put the ring only in the bottom of the big easy.
There is a 2 inch space at the bottom where food doesn't cook as fast as the rest. Set your basket on the ring and you eliminate that dead area. If you want a little smoke flavor, add some wood chips or pellets between the ring and the body of the big easy before you start cooking. You are going to love a Turkey cooked in there.

I feel so ashamed  :(  how could I over look that??   But then again I was not looking to help him mod but just to get the first cook in under his belt
