I'm a retired teacher (ESL) who loves smokin' n' grillin'!! I use a Traeger Texas pellet smoker and a Saber 500 Cast gas grill. I also like woodworking and gardening, so my 'free' time is limited(!).
Just now, I'm doing only my second brisket (first one was a disaster!). It went on at 6:30 this a.m., and it's sitting at 192
deg eight hours later. Got lucky and found a 10lb packer at Costco (prime!) for $3.69/lb.
Didn't have to foil against the dreaded stall as the temp rose steadily through 150deg. Will foil when done (at 203deg) and put in a faux cambro for an hour or so. Yum! Can't wait!!
