This is a quick and easy meal for a gas grill; very little prep time and not much clean up. I had 3 nice cutlets from my butcher Kah Meats; they are tenderized loin. I used my Weber Spirit and the back of grill grates for the cutlets.
Someone posted a beef tri tip roast that was seasoned with Pappy’s Choice and it had such nice color I had to get some of the seasoning. I got it from Amazon and opted for the blue label that is 50% less salt.
It is supposed to be great for Santa Maria style Tri Tip but good for all meats. I tasted mine and thought the salt level was right so I tried a little on the cutlets tonight.
I seasoned the cutlets with a light coat of Pappy’s Choice. I got my grill heated to med. about 400 deg. While that was heating up I got some diced bacon going in a CI skillet on the stove top and then added the chopped cabbage and some salt and pepper. It went on the grill and let cook about 5 minutes then got the cutlets to add. I sprayed the cutlets with olive oil and then on the grill grates. I find that olive oil on the first side is enough to carry over when I turn the meat.
I did the cutlets 5 to 6 minutes per side and was stirring the cabbage. I placed the cutlets on top of the cabbage and carried inside to serve. Our side was some cold pickled beets.
The wife and I enjoyed the meal and thought the seasoning worked well on the cutlets. I think I will be using Pappy’s Choice in a lot of future cooks.
