To the Turtle's point, I do remember (back in the day) cook one of these Hibachis:
Then, looong before anyone here ever heard of Sushi, we had these things called Japanese Steak Houses. There you'd have about 8 people sitting around a big flattop and the cook would come out and flip shrimp into your cocktail, but end up with something very much like what Gus served. (Looks tasty ! ! !)
At least, locally, those things have turned into these Sushi/Hibachi restaurants.
