Cornbread enchilada bake

Made this the other night and it turned out to be quite a hit with my family.

This recipe fed 10 people, feel free to cut in half (This filled a 17” round pan. If you cut in half, use a 10” round pan):

2 lbs ground beef
20 ounces enchilada sauce
2 cups of grated cheese
2 boxes Jiffy cornbread mix
Can of sliced olives
Optional: 2 cans of cream of corn (I don’t usually use it)

Brown the beef

Add the enchilada sauce and simmer for a few mins

Add the cheese to the beef/sauce mixture

Add the olives to the beef/sauce/cheese mixture

Evenly spread the cornbread mixture over the beef mixture

Bake for 30-40 mins at 350°





MAK 2 Star #3236, Weber 26.75" kettle, 36" Blackstone griddle, 17" Blackstone griddle.

I am not a vegetarian, but I eat animals that are... :-)

This recipe stands up on it's own, without modification

Dishes like this were staples when I was growing up in Texas. There are many variations - based on family recipes - or what you have around.

Try it with minced grilled onions, or chili - canned or leftover home made. Jalapeño cornbread mix, etc....Just depend son what you you feel....

Jalapeño cornbread... now why didn’t I think of that?!?! Hmmm, I’d have to make 2 versions as half of my family are light weights when it comes to anything spicy. Oh well,  LEFTOVERS :)

Never had enchiladas, but this looks delicious. My favorite part about it is that it is one dish simple. Or 2 if you don't have a CI skillet.
